Copycat Taco Bell Cheesy Gordita Crunch is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 1 lb. ground beef
  • 1 tsp. water
  • 1 tsp. cornstarch
  • 1/2 pkg. of Taco Bell Taco seasoning or 1 1/2 T. taco seasoning mix
  • 3/4 c. water
  • 6 flatbreads
  • 6 hard shelled taco shells

Ingredients for the Spicy Ranch Dressing:

  • 1/2 c. mayonnaise
  • 1/2 c. sour cream
  • 1/4 c. milk
  • 1 T. hot sauce, or to taste
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper, or to taste
  • 1/2 tsp. salt, or to taste
  • Dash of cayenne pepper, or to taste
  • 4 oz. cheddar cheese, hand shredded
  • 4 oz. pepper Jack cheese, hand shredded
  • 1/2 head of iceberg lettuce, sliced super thin

Directions:

  1. Make a slurry with the water & the cornstarch. Mix or whisk them together so that there are no lumps when they are well combined.
  2. In a large saucepan over medium heat brown the ground beef. Using a potato masher will help grind the beef into really small pieces.
  3. Once the ground beef is cooked all the way through push it to the far side of the saucepan. Then using tongs take a paper towel or two between the tongs & tilt the saucepan away from you. Soak up the extra grease from the pan with the paper towels.
  4. Add the taco seasoning to the ground beef & stir well to combined.
  5. Then add the water. Next add the cornstarch slurry & mix it well until it is well combined. Let it simmer for 10 minutes so that it thickens up the ground beef.
  6. In a small bowl, whisk all of the ingredients for the Spicy Ranch Dressing together until they are smooth & creamy.
  7. Mix together the hand shredded cheddar cheese & the hand shredded pepper Jack cheese.
  8. To eat put the flatbread on a microwave-safe plate. Then drizzle the cheese mixture on it. Then microwave it until the cheese melts. Should not take more than 1 minute.
  9. Once the cheese is melted, put a hard shelled taco shell right in the middle of the flatbread & cheese. Then fold the flatbread around the hard shelled taco, pressing it together & sealing it with the cheese.
  10. Spoon in a healthy serving of ground beef into the taco shell. Then add a spoonful of the Spicy Ranch Dressing & some shredded lettuce. Finish it up with more shredded cheeses.
  11. Can be eaten as is, or could add some diced tomatoes, some avocado and/or some black olives!
