Slow Cooker Soy Pork Chops
These are sticky, tender & glazed to perfection! They are pure comfort food with almost no effort to make them!

Makes 4 servings
Ingredients:
- 4 thick-cut bone in pork chops, about 1″ to 1 1/4″ thick
- 1/2 c. packed brown sugar
- 1/4 c. low-sodium soy sauce
- 1/2 c. low-sodium chicken broth
Directions:
- Pat the pork chops dry with paper towels. Then trim away any very large pieces of excess fat.
- Arrange the pork chops in a 5- to 6-quart slow cooker. Try to arrange them into a single layer, if possible.
- In a medium bowl whisk together the brown sugar, soy sauce & chicken broth. Whisk until the brown sugar is mostly dissolved.
- Pour the brown sugar mixture over the pork chops. Turn the chops gently over so that both sides are coated with the sauce.
- Cover the slow cooker on low for 4-5 hours, or on high for 2 1/2 to 3 hours.
- Cook until the pork is tender & reaches an internal temp of 145°F.
- Avoid cooking the chops much longer than necessary, especially if they are lean, so that they remain juicy.
- Carefully transfer the pork chops to a serving platter & cover loosely with foil.
- Pour the cooking liquid into a small saucepan. Bring it to a gentle simmer over medium heat & cook it for 5-10 minutes until the sauce reduces slightly. It will become thicker & glossy.
- Return the pork chops to the slow cooker or place them on a foil-lined baking sheet.
- Brush them generously with the reduced brown sugar soy glaze.
- For a deeply caramelized finish, place the chops under the broiler for 1-3 minutes, watching them closely so that they do not burn.
- The glaze should become shiny & sticky around the edges.
- To serve, place the pork chops on a serving platter & then spoon the remaining glossy glaze over the top/around the pork chops.
- Serve immediately, while they are still hot!
