Mexican Chicken Alfredo
If you are in the mood for a fabulous meal, to satisfy even the hungriest of eaters, then this recipe is for you!

Ingredients:
- 2 jars of Alfredo sauce
- 1 lb. fresh chicken breasts, boneless & skinless
- 1 jar of salsa
- 2 T. taco seasoning mix
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 – 8 oz. package of Fiesta blend shredded cheese
- 8 oz. rotini pasta (or gluten free rotini pasta), cooked until al dente
Directions:
- In a crockpot add the 2 jars of Alfredo sauce. Then add the jar of salsa. On top of them add the boneless & skinless chicken breasts.
- Generously season the chicken breasts with the taco seasoning.
- Then add the bell peppers & the Fiesta blend shredded cheese.
- Put the lid on the crockpot. Cook on high for 2-3 hours, or enough time to cook the chicken breasts.
- Then take the chicken breasts out of the crockpot & shred it. Put it back in the crockpot & add the pasta.
- Stir well to combine.
- Can be eaten just as it is, in a bowl, or on a plate. Or could be eaten with a side salad!
