Spicy Peanut Noodles
An easy, better than takeout noodle bowl, made with just a few pantry staples! They are creamy, nutty & a little bit spicy!

Ingredients:
- 8 oz. noodles, ramen or spaghetti
- 3 T. peanut butter
- 2 T. light soy sauce, or coconut aminos
- 1 tsp. sesame oil
- 1 tsp. chili crunch, or to taste
- 1 tsp. sugar
- 1 T. rice vinegar
- 1/4 c. of the reserved noodle water
- 2 garlic cloves, minced
- 1 tsp. ginger, grated
- Chili oil, optional garnish
- 1/4 c. scallions, diced, optional garnish
Directions:
- Bring a pot of water to a boil & cook the noodles until one minute short of al dente. Reserve about 1/4 cup of the noodle water, then rinse the noodles under cold water & drain.
- In a bowl combine the peanut butter, light soy sauce, sesame oil, chili crunch (to taste), sugar, rice vinegar, reserved noodle water, garlic & ginger. Whisk until smooth & fully incorporated. Adding a splash more noodle water if the sauce is too thick.
- Add the noodles to the bowl & toss until the sauce clings to every strand.
- Transfer to a bowl then, optionally garnish with chili oil & scallions.
- Serve right away for the best texture!
- Leftovers thicken as they sit, so loosen with a splash of water when reheating!
