Loaded Pico de Gallo

Red Kettle Cook

What a great compliment to tortilla chips! It goes with tacos, burritos & any Mexican meal that you make! It is packed full of flavor & has an amazing flavor!

Loaded Pico de Gallo is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 2-15 oz. cans of black beans, rinsed & drained
  • 2 c. frozen whole kernel corn
  • 1/2 lb. fresh mixed lettuce, finely chopped
  • 2-3 whole fresh tomatoes, diced
  • 1 medium onion, diced
  • 1/2 bunch cilantro, diced
  • 2 lemons or limes, squeezed

 

Directions:

  1. Mix all ingredients together until they are well combined.
  2. Cover & refrigerate for at least 1 hour before eating. Give the flavors a chance to meld together.
  3. Enjoy with tortilla chips, or on top of tacos, or burritos!
