Makes 8 tortillas
Ingredients:
- 2 c. white whole wheat flour
- 3 T. extra virgin olive oil
- 1/2 tsp. salt, or to taste
- 2/3 c. warm water
Directions:
- In a bowl mix together the flour, oil & salt.
- Slowly add the warm water while stirring until a rough dough comes together. Add a little extra water, if needed.
- Turn the dough onto the counter & knead it for about 2 minutes.
- Return the dough to the bowl & let it rest for about 20 minutes.
- Divide the dough into 8 equal balls.
- Roll each ball into a circle. They should be very thin.
- Heat a pan over medium-high heat & lightly grease it.
- Drop one dough circle into the pan & let it cook until bubbles form. This should only take about 1 minute.
- Flip over & cook for another minute. Press down with a spatula if needed. Repeat with the remaining dough balls.
- Use immediately, or store in an airtight container, in the fridge or freezer!
