Homemade Giant Peanut Butter Cups
This recipe is almost too good to be true! These are quick to make for a healthy, decadent treat! They could be customized to suit your tastes!

Makes 4
Ingredients:
- 4 rice cakes
- 6 T. creamy peanut butter
- 8 dates, pitted & cut in half
- 2 tsp. unsalted peanuts, chopped
- 8 T. dark chocolate chips
- 1 tsp. coconut oil
- 4 pinches of coarse salt, or to taste
- Crushed pretzels, mini M&Ms, crushed potato chips, anything that works for an optional topping
Directions:
- Melt the chocolate chips & the coconut oil in the microwave (about 2 minutes).
- Top each rice cake with peanut butter & then add the chopped dates.
- Next add the melted chocolate chips, making sure to cover the entire rice cake.
- Add a sprinkle of course salt (to taste) & the chopped peanuts on top of the chocolate.
- Freeze until the chocolate & the peanut butter are set. Usually this takes about 20 minutes.
- They can be eaten right out of the freezer, or thawed completely before you take the first luscious bite!
