Ingredients for the Cornstarch Slurry:
- 1 tsp. water
- 1 tsp. cornstarch
Ingredients for the Gordita Crunch:
- 1 lb. ground beef
- 1/2 pkg. of Taco Bell seasoning
- 3/4 c. water
- 8 oz. cheddar cheese, hand shredded
- 8 oz. pepper Jack cheese, hand shredded
- 1/2 of a head of Iceberg lettuce, sliced super thin
- 3 flatbreads
- 3 hard shelled tacos
Ingredients for the Spicy Ranch Sauce:
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 1/4 c. milk
- 1 T. hot sauce, or to taste
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper, or to taste
- 1/2 tsp. salt, or to taste
- A dash of cayenne pepper, or to taste
Directions:
- Add the water to a small bowl & then add the cornstarch.
- Mix it or whisk it until it is smooth.
- Add the ground beef to a skillet on medium heat.
- To get the ground beef finely chopped, use a potato masher, or a meat masher.
- Cook the ground beef until it is brown & fully cooked through. Making sure that it is finely ground.
- Once the ground beef is cooked then drain the fat from the skillet. Take a few paper towels & a pair of tongs. Tilt the skillet so that all of the fat goes to the bottom of the skillet. Then dab the paper towels into the fat until you have soaked up all of it.
- Mix the Taco Bell seasoning into the ground beef until it is fully combined. Then add the water to the skillet & mix again until it thickens the ground beef & Taco Bell seasoning.
- Next add the Cornstarch Slurry to the ground beef mixture. Mix it well & let it sit for 10 minutes.
- Now make the Spicy Ranch Sauce. Add all ingredients to a bowl & whisk them until they are well combined.
- Combine the shredded cheddar cheese & the pepper Jack cheese until they are mixed together evenly.
- Put a flatbread on a microwave safe plate. Then drizzle some of the cheese mixture on it.
- Microwave the flatbread & cheese until the cheese melts. This should only take a few seconds.
- Then put the hard shelled taco in the middle of the flatbread & melted cheese. Fold the flatbread around the hard shelled taco, the melted cheese should “seal” it in place.
- Next add a healthy serving of the ground beef to the inside of the hard shelled taco.
- Then pour some Spicy Ranch sauce over the ground beef. Then add some shredded lettuce.
- Finish it up with more of the shredded cheese mixture & more hot sauce (optional)!
