Ingredients:

  • 1 lb. chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 1/2 tsp. salt, or to taste
  • 1/4 tsp. garlic powder
  • 1/4 tsp. white pepper, or to taste
  • 3 T. water

Ingredients for the Batter:

  • 1 egg
  • 1/4 tsp. salt, or to taste
  • 1/4 tsp. garlic powder
  • 1/2 c. water
  • 2 tsp. baking powder
  • 1/2 c. cornstarch
  • 3/4 c. all purpose flour
  • 2 T. vegetable oil

Ingredients for the Sauce:

  • 1/2 c. sugar
  • 1/2 c. ketchup
  • 1/4 c. honey
  • 6 T. water
  • 1 T. roasted sesame seeds (optional topping)

Directions:

  1. Put the diced chicken breasts in a plastic zipper bag.
  2. Add the salt (to taste), garlic powder, white pepper (to taste) & the water to the chicken.
  3. Before you close the zipper bag, leaving in some of the air & then close it. Before doing anything else release as much air from the bag as is possible. Then give the chicken mixture a good shake & a quick massage. Then set it aside.
  4. Next make the Batter in a bowl by adding all of the ingredients & whisking everything together really well.
  5. Add the chicken to the Batter & coat the chicken pieces until all sides are evenly coated.
  6. Using a deep fryer set at 375°F, deep fry the chicken until it is golden brown & cooked through. Should take about 5 minutes. Make sure that the chicken sits towards the top of the deep fryer, or it will stick to the bottom of the deep fryer.
  7. Remove the chicken from the deep fryer & then put it back into the deep fryer for a double fry. It will produce a crispier texture on the chicken.
  8. In a saucepan over medium heat add all of the ingredients for the Sauce. Mix them together until they are well combined making sure that the sugar is dissolved.
  9. Once the sugar has dissolved, add in the chicken & give it a good toss so that it coats the chicken evenly.
  10. After removing the chicken & sauce from the saucepan then top it with the roasted sesame seeds (optional topping).
