Chickpea Blondies
Looking for a healthy sweet treat with no flour? Look no further than this recipe! They taste great & are made with ingredients that you probably already have in your pantry!

Ingredients:
- 1-15 oz. can of garbanzo beans, rinsed & drained well
- 1/2 c. peanut butter, or any nut butter
- 1 tsp. vanilla extract
- 1/2 c. maple syrup
- 1/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt, or to taste
- 1/4 c. mini chocolate chips, or dairy free chocolate chips
Directions:
- Preheat oven to 350°F.
- Prepare an 8×8 baking pan by spraying it with nonstick cooking spray.
- In a blender or a food processor, add all of the ingredients, except for the mini chocolate chips. Process on high until creamy & smooth.
- Fold in the mini chocolate chips into the batter by hand until they are evenly distributed.
- Pour the batter into the prepared baking dish, pushing it around until it is one layer that is the same height.
- Bake for 20-25 minutes or until a toothpick can be inserted in the center of it, comes out clean.
- Cool in the pan for 30 minutes prior to slicing it into 16 bars.
- Optionally drizzle the tops of the bars with melted chocolate & extra nut butter.
