Chickpea Blondies

Looking for a healthy sweet treat with no flour? Look no further than this recipe! They taste great & are made with ingredients that you probably already have in your pantry!

Chickpea Blondies is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 1-15 oz. can of garbanzo beans, rinsed & drained well
  • 1/2 c. peanut butter, or any nut butter
  • 1 tsp. vanilla extract
  • 1/2 c. maple syrup
  • 1/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt, or to taste
  • 1/4 c. mini chocolate chips, or dairy free chocolate chips

 

Directions:

  1. Preheat oven to 350°F.
  2. Prepare an 8×8 baking pan by spraying it with nonstick cooking spray.
  3. In a blender or a food processor, add all of the ingredients, except for the mini chocolate chips. Process on high until creamy & smooth.
  4. Fold in the mini chocolate chips into the batter by hand until they are evenly distributed.
  5. Pour the batter into the prepared baking dish, pushing it around until it is one layer that is the same height.
  6. Bake for 20-25 minutes or until a toothpick can be inserted in the center of it, comes out clean.
  7. Cool in the pan for 30 minutes prior to slicing it into 16 bars.
  8. Optionally drizzle the tops of the bars with melted chocolate & extra nut butter.
