Tuscan White Bean Soup

This hardy soup is a warm and comforting bowl filled with simple, wholesome ingredients, creating a flavorful and satisfying dish! Each spoonful is cozy, nourishing & full of rustic homemade flavor!

Ingredients:

  • 32 oz (2 cartons) of Vegetable Broth (can use chicken or beef broth)
  • 1 T. oil
  • 1 onion, chopped
  • 2 stalks of celery, chopped
  • 2 bell peppers, chopped
  • 2 cans cannellini beans or great northern beans
  • 2 large potatoes, chopped
  • 1 c. carrots, chopped
  • 1 T. minced garlic
  • 1 28 oz can crushed tomato or 1 jar Marinara Sauce
  • 1 c. pearled barley
  • 1 T. Italian seasoning
  • 1 T. basil
  • 1 T. oregano
  • 1/4 c. sugar or monk fruit
  • Salt & Pepper, to taste
  • Parsley, chopped (optional garnish)
  • Tortilla chips (optionial)

 

Directions:

  1. Sauté onions, celery, peppers & garlic in 1 T. oil.
  2. Add broth, potatoes & carrots. Then mix everything together.
  3. Then add the crushed tomatoes.
  4. Next add the seasoning & mix everything together until it is well combined.
  5. Add the two cans of drained beans & 1 c. of barley.
  6. Heat until it boils & then simmer for 1 hour.
  7. Serve with tortilla chips (optionial)
