Sweet Ginger Chili Chicken
Tender chicken coated in a sweet ginger chili sauce that hits all of the notes—sweet, spicy, savory & deeply satisfying!

Ingredients:
- 2 chicken breasts or thighs, boneless & skinless, cut into bite-sized pieces
- Salt & pepper, to taste
- 2 T. vegetable oil
- 3 cloves of garlic, minced
- 1 T. fresh ginger, minced
- 1/4 c. soy sauce
- 1/4 c. sweet chili sauce or sweet ginger chips sauce
- 2 T. honey
- 1 tsp. sesame oil (optional)
- Red pepper flakes, to taste (adjust for spiciness)
- Chopped green onions & sesame seeds for garnish
Directions:
- Mix the chicken breasts or thighs with the salt & pepper (to taste) in a bowl.
- In a separate bowl whisk together the soy sauce, honey & minced ginger. Set aside.
- In a medium-hot skillet add the oil until it is shimmering. Then add the minced garlic & cook until it is fragrant, about 2 minutes. Then add the chicken & cook until it is browned on all sides.
- Pour in the sauce & stir to evenly coat all of the chicken. Then cook until the sauce thickens a little & add the sesame oil (optional).
- Garnish with the green onions & sesame seeds.
- Serve hot with a side of rice.
