A Wok in the Pork
You will squeal with delight when you discover that this sweet & sour pork dish will not make you gain weight!

Makes 4 servings
Ingredients:
- 2 tsp. peanut oil
- 1 1/4 lbs. pork tenderloin, cut into cubes or strips
- 2 tsp. gingerroot, grated
- 1 tsp. garlic, minced
- 1 1/2 c. green bell pepper, chopped & carrots, sliced
- 1 c. onions, chopped
- 1 can of pineapple chunks, undrained
- 1/4 c. ketchup or rice vinegar
- 3 T. brown sugar
- 2 T. reduced-sodium soy sauce
- 1 T. cornstarch
- 4 c. hot cooked brown rice or quinoa
Directions:
- Heat the oil in a large wok or skillet over medium-high heat.
- Add the pork tenderloin, gingerroot & garlic. Cook & stir for 6-7 minutes. The pork should be cooked through & begins to brown.
- Remove the pork from the wok or skillet & keep warm.
- Add the green bell peppers, carrots & onions to the wok or skillet. Cook & stir for about 5 minutes. The vegetables should be tender when they are ready.
- Meanwhile prepare the sauce. Drain the pineapple, reserving 1/2 c. of the juice.
- In a small bowl combine the reserved pineapple juice, ketchup, rice vinegar, brown sugar, soy sauce & cornstarch. Stir until well combined.
- Add the sauce to the vegetables in the wok or skillet, along with the pork & pineapple chunks.
- Cook until the sauce is bubbly & has thickened. The pork & pineapple should be heated through.
- Serve over hot brown rice or quinoa!
