Longhorn Steakhouse Parmesan Chicken
There is no better meal for a keto/low carb diet than this one! It is packed with protein & delicious flavor that cannot be beat! Add this to your weekly menu & you will be happy that you did!
Ingredients:
- 4 chicken breasts, boneless & skinless
- 1 c. all purpose flour
- 2 large eggs
- 1 c. Parmesan cheese, freshly grated
- 1 c. Panko breadcrumbs
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. salt, or to taste
- 1/4 tsp. black pepper, or to taste
- 1/4 c. olive oil
- 1 c. marinara sauce or Grandpa’s Pasta Sauce
- 1 c. mozzarella cheese, freshly grated
- Parsley, freshly chopped (optional garnish)
Directions:
- Preheat oven to 375˚ F.
- Mix together the Parmesan cheese, Panko breadcrumbs, garlic powder, onion powder, dried basil, dried oregano, salt & black pepper in a shallow dish.
- Set up a breading station with three shallow dishes: one with the flour, one with the two beaten eggs & one with the Parmesan cheese mixture.
- Dredge each chicken breast in the flour, then the beaten eggs & then coat them in the Parmesan cheese mixture.
- Heat the olive oil in a skillet over medium heat & cook the breaded chicken breasts until golden brown on both sides.
- Transfer the chicken to a prepared baking dish. Top each with marinara sauce, or Grandpa’s Pasta Sauce & the shredded mozzarella cheese.
- Bake for 20-25 minutes until the chicken is cooked through & the cheese is melted.
- Garnish with the fresh parsley (if using) before serving.
- Serve with a side salad or with Italian Bread Brushed with Fresh Garlic
