Chicken Ranch Quesadillas
If you are looking for a quick & easy supper item then look no further! You could make the inside mixture ahead of time & then cook them right before it is time to eat! They are best if eaten hot off of the stove!
Ingredients:
- 1 lb. rotisserie chicken, shredded
- 6 slices bacon, cooked & diced
- 2 T. Ranch seasoning
- 2 T. Ranch dressing
- 1 T. organic red onion, diced
- 1 c. cheddar cheese, shredded
- 12 flour tortillas (Use low carb tortillas for Keto or gluten free for gluten free)
Optional garnishes: sour cream, cilantro, green onions, avocado and/or lime wedges
Directions:
- Mix all ingredients well together in a bowl.
- Scoop 2 healthy T. of the mixture on a tortilla & spread it out almost to the edges. Then place a second tortilla on top of it.
- Using a cast iron skillet, or a non-stick skillet, brown both sides of the tortillas. Pressing down on each one, as they are cooking.
- When they are finished cooking, cut each quesadilla into four slices & serve with the optional garnishes.
