Cheesy Buffalo Chicken Burritos

If you are looking to lose some weight & build muscle then this recipe is for you! They are packed through with chicken, cheese & yummy ingredients! They are perfect to eat one at a time, or to make a meal out of them!

Ingredients:

  • 2 lbs. chicken breasts, boneless & skinless, diced
  •  tsp. salt, or to taste
  • 1 1/2 tsp. garlic powder
  • 1 1/2 tsp. onion powder
  • 1/2 tsp. black pepper, or to taste\
  • 1/2 tsp. chili powder
  • 2 tsp. smoked paprika
  • 1 tsp. olive oil, divided
  • 1/4 c. Buffalo sauce
  • 5 garlic cloves, finely diced
  • 8 oz. cream cheese, softened
  • 1 1/2 tsp. ranch seasoning mix
  • 1/3 c. honey
  • 1/2 c. mozzarella cheese, shredded
  • 1 c. cheddar cheese, shredded
  • 1/4 c. green onions, sliced
  • 1/4 c. chives
  • 15 flour tortillas (or gluten free tortillas)

 

Directions:

  1. Preheat oven to 350° F.
  2. Put the chicken in a bowl with the salt, pepper (to taste), smoked paprika, onion powder, garlic powder & Buffalo sauce. Mix all ingredients together.
  3. Using 1/2 tsp. olive oil, cook the chicken mixture in a skillet set on medium heat for 4 minutes. Then stir it around & cook it for an additional 4 minutes. Set aside.
  4. Using the remaining 1/2 tsp. olive oil add the finely diced garlic to the skillet & cook just until fragrant. Add the Buffalo sauce, cream cheese & the Ranch Seasoning Mix. Stir until well combined & smooth.
  5. Lower the heat to medium-low & add the honey until well mixed.
  6. Then combine the sauce with the chicken mixture & stir everything together.
  7. Add the mozzarella cheese, green onions & chives. Mix well until everything is cheesy & creamy.
  8. Warm up the tortillas in a microwave.
  9. Equally distribute the chicken mixture on the tortilla & add cheddar cheese to the top of the chicken mixture. Add more chives to the top of the cheddar cheese.Roll the tortilla up into a burrito.
  10. Repeat the same process for all of the tortillas.
  11. Wrap them in aluminum foil & bake them for 15-20 minutes. Making sure that the chicken is hot inside of the burrito.
  12. Store them in the freezer until you are ready to eat them.
  13. To reheat them one at a time, put them in the oven at 350° F. Or put them in an air fryer at 400° F. Cook them for 10 minutes per side until they are browned & warm all of the way through.
