Cheesy Buffalo Chicken Burritos
If you are looking to lose some weight & build muscle then this recipe is for you! They are packed through with chicken, cheese & yummy ingredients! They are perfect to eat one at a time, or to make a meal out of them!
Ingredients:
- 2 lbs. chicken breasts, boneless & skinless, diced
- tsp. salt, or to taste
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. onion powder
- 1/2 tsp. black pepper, or to taste\
- 1/2 tsp. chili powder
- 2 tsp. smoked paprika
- 1 tsp. olive oil, divided
- 1/4 c. Buffalo sauce
- 5 garlic cloves, finely diced
- 8 oz. cream cheese, softened
- 1 1/2 tsp. ranch seasoning mix
- 1/3 c. honey
- 1/2 c. mozzarella cheese, shredded
- 1 c. cheddar cheese, shredded
- 1/4 c. green onions, sliced
- 1/4 c. chives
- 15 flour tortillas (or gluten free tortillas)
Directions:
- Preheat oven to 350° F.
- Put the chicken in a bowl with the salt, pepper (to taste), smoked paprika, onion powder, garlic powder & Buffalo sauce. Mix all ingredients together.
- Using 1/2 tsp. olive oil, cook the chicken mixture in a skillet set on medium heat for 4 minutes. Then stir it around & cook it for an additional 4 minutes. Set aside.
- Using the remaining 1/2 tsp. olive oil add the finely diced garlic to the skillet & cook just until fragrant. Add the Buffalo sauce, cream cheese & the Ranch Seasoning Mix. Stir until well combined & smooth.
- Lower the heat to medium-low & add the honey until well mixed.
- Then combine the sauce with the chicken mixture & stir everything together.
- Add the mozzarella cheese, green onions & chives. Mix well until everything is cheesy & creamy.
- Warm up the tortillas in a microwave.
- Equally distribute the chicken mixture on the tortilla & add cheddar cheese to the top of the chicken mixture. Add more chives to the top of the cheddar cheese.Roll the tortilla up into a burrito.
- Repeat the same process for all of the tortillas.
- Wrap them in aluminum foil & bake them for 15-20 minutes. Making sure that the chicken is hot inside of the burrito.
- Store them in the freezer until you are ready to eat them.
- To reheat them one at a time, put them in the oven at 350° F. Or put them in an air fryer at 400° F. Cook them for 10 minutes per side until they are browned & warm all of the way through.
