Mexican-Italian Fusion Skillet Meal
This one-pan approach marries the bold flavors of salsa & taco seasoning with the creamy richness of Alfredo sauce for a satisfying dish!

Ingredients:
- 1 lb. lean ground beef
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 packet of taco seasoning or 1 oz. of taco seasoning mix
- 1 c. of uncooked long-grained rice
- 2 c. beef or chicken stock
- 1 c. salsa (mild, medium or hot)
- 1 c. Alfredo sauce (jarred or homemade)
- 1 c. shredded cheese (Mexican blend or cheddar)
- Olive oil or cooking spray
- Sour cream, avocado, fresh cilantro (chopped), or jalapeños (optional toppings)
Directions:
- Cook the beef & onion: Heat a little oil in a skillet over medium-high heat. Add the ground beef & the chopped onion. Cook until the beef is no longer pink & the onion is soft. Drain off any excess fat.
- Season the Meat: Stir in the minced garlic & the entire packet of taco seasoning (or taco seasoning mix). Cook for about one minute until fragrant.
- Add liquid & rice: Stir in the uncooked rice, beef or chicken broth & salsa. Mix well to combine all ingredients together.
- Simmer: Bring the mixture to a boil & then reduce the heat to low. Cover the skillet tightly with a lid & simmer for 18-20 minutes. Or until the rice is tender & the liquid has been absorbed.
- Incorporate Alfredo sauce & cheese: Remove the skillet from the heat. Stir in the Alfredo sauce until everything is well combined. Sprinkle the shredded cheese evenly over the top of the mixture.
- Melt the cheese & serve: Cover the skillet again & let sit for 2-3 minutes, or until the cheese is melted and gooey.
- Garnish: Serve the dish warm with your choice of optional toppings, such as a dollop of sour cream, or chopped fresh cilantro!
Tip: To double this recipe use 4 c. of beef broth, 2 c. of rice, 2 c. Alfredo sauce & 2 c. salsa.
