Creamy Protein Queso
If you are looking for a recipe that is guilt-free to dip your tortilla chips in then this one is it! It is gluten free, low carb & keto friendly! Not to mention that the flavors are delicious & you will want to lick the bowl before you are finished with the last chip!

Ingredients:
- 1 c. cottage cheese
 - 1/2 pkg. taco seasoning
 - 1/2 c. cheddar cheese, shredded
 - 1/4 c. Rotel tomatoes
 - 2 T. heavy cream, optional
 
Directions:
- Blend the cottage cheese & the taco seasoning together until smooth.
 - Stir in the shredded cheddar cheese, Rotel & heavy cream (if using it).
 - Microwave on high for 90-120 seconds, stirring halfway through.
 - Serve warm & enjoy with your favorite keto dippers, or tortilla chips, or gluten free tortilla chips!
 
Tips:
- Use full-fat cottage cheese for a smoother, creamier melt.
 - Stir right before serving for a glossy, dippable finish that doesn’t separate.
