Chipotle Piri Beef Rolls

If you need an idea of what to meal prep, for when that inevitable craving hits, then look no further! These are super cheesy, crispy & savory! This recipe might be the answer to your prayers!

Ingredients:.

  • 1 lb. ground beef
  • 1 T. taco seasoning mix
  • 1 T. chipotle sauce
  • 6 low carb flour tortillas (or gluten free flour tortillas)
  • 1 c. Colby Jack cheese, shredded & divided
  • 1 T. butter, melted

 

Directions:

  1. Preheat oven to 350° F.
  2. In a skillet set on medium heat brown the ground beef.
  3. Once it is done cooking add the taco seasoning & the chipotle sauce. Stir until well combined & then remove from the heat.
  4. Fill a low carb flour tortilla halfway with the ground beef mix & then add some of the Colby Jack cheese on top of the ground beef.
  5. Roll the low carb tortillas up in a roll & place in a prepared baking dish.
  6. Repeat the same with the rest of the low carb flour tortillas, beef & cheese until all of the rolls are filled.
  7. Top with the melted butter & then the rest of the Colby Jack cheese.
  8. Bake for 15-20 minutes until the cheese is melted on top & the beef mixture is hot.
  9. Cut into six rolls & serve hot!
