Chipotle Piri Beef Rolls
If you need an idea of what to meal prep, for when that inevitable craving hits, then look no further! These are super cheesy, crispy & savory! This recipe might be the answer to your prayers!
Ingredients:.
- 1 lb. ground beef
- 1 T. taco seasoning mix
- 1 T. chipotle sauce
- 6 low carb flour tortillas (or gluten free flour tortillas)
- 1 c. Colby Jack cheese, shredded & divided
- 1 T. butter, melted
Directions:
- Preheat oven to 350° F.
- In a skillet set on medium heat brown the ground beef.
- Once it is done cooking add the taco seasoning & the chipotle sauce. Stir until well combined & then remove from the heat.
- Fill a low carb flour tortilla halfway with the ground beef mix & then add some of the Colby Jack cheese on top of the ground beef.
- Roll the low carb tortillas up in a roll & place in a prepared baking dish.
- Repeat the same with the rest of the low carb flour tortillas, beef & cheese until all of the rolls are filled.
- Top with the melted butter & then the rest of the Colby Jack cheese.
- Bake for 15-20 minutes until the cheese is melted on top & the beef mixture is hot.
- Cut into six rolls & serve hot!
