Chili Cheese Burrito
If you are looking for a fulfilling meal, then this dish is the best one yet! It is much like a favorite one at a popular fast food restaurant & you will not find one better!
Ingredients:
- 1 1/2 lb. ground beef
- 3 T. taco seasoning
- 1 1/2 c. water
- 1/2 small onion, chopped
- 1/2 c. refried beans
- 6 T. tomato paste
- 1 tsp. cayenne pepper, optional
- 1/2 tsp. salt
- 8 oz. sharp cheddar cheese, freshly shredded
- flour tortillas (Use low carb tortillas for Keto or gluten free for gluten free)
Optional garnishes: sour cream, cilantro, green onions, avocado and/or lime wedges
Directions:
- Cook the ground beef in a skillet over medium heat, making sure to break it apart while it is cooking. Drain any excess grease afterwards.
- Add the onions, water, tomato paste, beans & seasonings. Then cook for about 5 minutes until the onions are tender & the beef mixture has thickened.
- Add the shredded cheese & stir until melted.
- Place a heaping 1/4 c. of the beef mixture onto a warmed tortilla & roll it up like a burrito to eat it.
