Veggie Burrito Bowl
If you are looking for something to satisfy a fulfilling meal, then this dish is the best one yet! It is much like a favorite one at a popular restaurant & you will not find one better!
Ingredients:
- 1 c. brown rice
- 2.8 oz. black beans
- 2 T. salsa (use gluten free salsa if you are gluten free)
- 1/2 of an avocado
- 1 oz. lettuce
Optional toppings: sour cream, tomatoes, hot sauce
Directions:
- Cook the rice according the the package directions. Then add the black beans.
- Mix them with the salsa.
- Put the lettuce down in the bottom of a bowl. Top with the brown rice & black beans. Then add the avocado & any optional toppings of your choice.
