Tuscan White Bean Soup
This hardy soup is a warm and comforting bowl filled with simple, wholesome ingredients, creating a flavorful and satisfying dish! Each spoonful is cozy, nourishing & full of rustic homemade flavor!

Ingredients:
- 32 oz (2 cartons) of Vegetable Broth (can use chicken or beef broth)
- 1 T. oil
- 1 onion, chopped
- 2 stalks of celery, chopped
- 2 bell peppers, chopped
- 2 cans cannellini beans or great northern beans
- 2 large potatoes, chopped
- 1 c. carrots, chopped
- 1 T. minced garlic
- 1 28 oz can crushed tomato or 1 jar Marinara Sauce
- 1 c. pearled barley
- 1 T. Italian seasoning
- 1 T. basil
- 1 T. oregano
- 1/4 c. sugar or monk fruit
- Salt & Pepper, to taste
- Parsley, chopped (optional garnish)
- Tortilla chips (optionial)
Directions:
- Sauté onions, celery, peppers & garlic in 1 T. oil.
- Add broth, potatoes & carrots. Then mix everything together.
- Then add the crushed tomatoes.
- Next add the seasoning & mix everything together until it is well combined.
- Add the two cans of drained beans & 1 c. of barley.
- Heat until it boils & then simmer for 1 hour.
- Serve with tortilla chips (optionial)
