Super Simple Corned Beef
This recipe has only a few ingredients & it is made in a crockpot! It slices beautifully & is beyond delicious!

Ingredients:
- 1 3-4 lb. prebrined corned beef
- 1 onion, quartered
- 2 c. cabbage, chopped into chunks
- 3-4 medium-sized potatoes, halved or quartered
- 3-4 carrots, peeled & cut into big chunks
- 6 c. water
Directions:
- Put the corned beef at the bottom of a crockpot, or slow cooker, with the fat cap facing up. Sprinkle the top of the corned beef with the seasoning packet that came with the corned beef.
- Scatter the pieces of onion, cabbage, potatoes & carrots around the corned beef.
- Pour in the water, or until it covers the corned beef halfway up, but not fully immersed.
- Set the crockpot, or slow cooker, to low for 8-10 hours.
- Once done, remove the corned beef & let it rest for a few minutes.
- Then slice it up, against the grain.
- Serve it by drizzling some of the broth over it.
Pro Tip: Replace the water with a dark stout, such as Guinness.
