Spicy Peanut Butter Ramen
Kick up Instant Ramen with this recipe! It will change the way you eat ramen noodles forever! It is also a vegetarian dish & that is a hidden bonus!

Ingredients:
- 1/2 c. creamy peanut butter
- 1 T. chili garlic sauce
- 2 T. soy sauce (or coconut aminos)
- 2 T. honey
- 2 pkgs. of Instant Ramen (or gluten free Instant Ramen), discard the seasoning pkgs.
- 2 green onions, diced (optional garnish)
- 1/4 c. chopped/crushed peanuts (optional garnish)
Directions:
- In a bowl combine the peanut butter, chili garlic sauce, soy sauce (or coconut aminos) & honey. Stir until a smooth paste forms.
- Bring a small pot of water to a boil. Take 1/4 of a c. of the boiling water & stir it into the peanut butter paste. It should form a smooth pourable sauce.
- Add the ramen noodles (without the seasoning packs) to the pan of boiling water & boil for 2-3 minutes or until tender.
- Drain the noodles & return then to the pan with the heat off.
- Pour the peanut sauce over the top of the noodles & stir to combine.
- Top with the diced green onions (optional garnish) & chopped/crushed peanuts (optional garnish) if desired.
- Serve immediately while the noodles are still hot.
