Soy Garlic Chicken Thighs
If you are in the mood for a wonderful chicken meal then this recipe is for you! It is simple to make & does not take much time in the kitchen!

Ingredients:
- 4 chicken thighs, boneless with the skin on
- 1/4 c. corn starch
- 2 T. neutral oil
Ingredients for the Sauce:
- 3 T. butter
- 3 T. minced garlic
- 1 T. minced ginger
- 4 T. light brown sugar
- 4 T. light soy sauce (or coconut aminos)
- 3 scallions (optional garnish)
Directions:
- Coat the chicken thighs with the corn starch.
- In a skillet cook the chicken thighs in the oil, until both sides are brown & crispy. Then remove them from the skillet.
- In the same skill add the ingredients for the Sauce. Stir until well combined & slightly thickened.
- Return the chicken thighs to the skillet & coat both sides with the Sauce.
- Serve on top of a bed of rice & garnish with the scallions (optional).
