Pizza Chips

Red Kettle Cook

If you are in the mood for pizza then this recipe is for you! It has all of the same ingredients, except it does not have a crust, so it is keto/low carb!

Ingredients:

  • 1 c. mozzarella cheese, shredded
  • 1/2 c. cheddar cheese, shredded (optional)
  • 1/2 c. pizza sauce or marinara sauce
  • 12-18 slices of pepperoni
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • 2 T. Parmesan cheese, grated
  • 1/4 tsp. crushed red pepper flakes (to taste)

 

Directions:

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Make the Cheese Bases: Place small piles (about 1 T. each) of mozzarella on the baking sheet, spacing them 2 inches apart. Add a pinch of cheddar (if using).
  4. Add Toppings: Sprinkle each cheese mound with Italian seasoning, garlic powder & a little Parmesan cheese. Place one pepperoni slice on top of each pile.
  5. Bake for 6–8 minutes, or until the edges are golden & crispy. Allow the chips to cool on the pan for 3–4 minutes to firm up.
  6. To serve remove them from the sheet pan & serve warm with pizza sauce or marinara sauce for dipping.
  7. For extra flavor, add crushed red pepper flakes (to taste), or replace the pepperoni with mini slices of pepperoni.
