Peanut Butter Chocolate Rice Crispy Squares
These are easy to make & it only takes five ingredients to make them! They are crunchy & have a chocolate topping! They are best eaten when they are cold and/or frozen!

Ingredients for the Peanut Butter Layer:
- 2-32 c. crispy rice cereal or crushed rice cakes
- 1/4 c. peanut butter
- 1/4 c. maple syrup, at room temperature
- 1 T. coconut oil, melted
Ingredients for the Chocolate Topping:
- 6 oz. dark or semi-sweet chocolate
- 2-3 tsp. coconut oil
Directions:
- In a bowl mix the peanut butter, maple syrup & melted coconut oil together until smooth.
- Add the rice cereal or crushed rice cakes & stir until well combined.
- Press the mixture evenly into a parchment paper lined 7×11 or an 8×8 pan & smooth the top of it.
- Melt the chocolate with the remaining 2-3 tsp. of coconut oil, stirring well to combine.
- Pour the melted chocolate over the peanut butter layer & spread it out evenly. Sprinkle a little flaky sea salt (optional) over the top of the chocolate layer.
- Freeze for at least 1 hour, or until firm to the touch.
- Then slice it & enjoy!
Pro Tip: Store any leftovers in the fridge or freezer.
