Parmesan Crusted Chicken

Makes 4 servings

Ingredients:

  • 4 chicken breasts, boneless & skinless
  • 1 c. Parmesan cheese, grated
  • 1 c. breadcrumbs (preferably panko)
  • 2 eggs
  • 1 T. Dijon mustard
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • Salt & pepper, to taste
  • 2 T. fresh parsley, chopped (for garnish)
  • Olive oil for drizzling

 

Directions:

  1. Preheat oven to 400°F & line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk together the eggs & Dijon mustard until well combined.
  3. In another bowl mix the grated Parmesan cheese, breadcrumbs/panko, garlic powder, onion powder, salt (to taste) & pepper (to taste) together.
  4. Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat it in the Parmesan breadcrumb/panko mixture. Press down each one gently to adhere the breadcrumbs/panko to the chicken breasts.
  5. Place the coated chicken breasts on the prepared baking sheet. Drizzle with olive oil for added crispiness.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through & the coating is golden brown/crispy.
  7. Remove from the oven & let rest for a few minutes before garnishing with the fresh parsley. Serve warm & enjoy!
