Parmesan Crusted Chicken
The flavors from this recipe will please your taste buds! The chicken turns out so juicy & the crust is crispy! This is a recipe that will be made over & over again!
Makes 4 servings
Ingredients:
- 4 chicken breasts, boneless & skinless
- 1 c. Parmesan cheese, grated
- 1 c. breadcrumbs (preferably panko)
- 2 eggs
- 1 T. Dijon mustard
- 1 tsp. onion powder
- 1 tsp. garlic powder
- Salt & pepper, to taste
- 2 T. fresh parsley, chopped (for garnish)
- Olive oil for drizzling
Directions:
- Preheat oven to 400°F & line a baking sheet with parchment paper.
- In a shallow bowl, whisk together the eggs & Dijon mustard until well combined.
- In another bowl mix the grated Parmesan cheese, breadcrumbs/panko, garlic powder, onion powder, salt (to taste) & pepper (to taste) together.
- Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat it in the Parmesan breadcrumb/panko mixture. Press down each one gently to adhere the breadcrumbs/panko to the chicken breasts.
- Place the coated chicken breasts on the prepared baking sheet. Drizzle with olive oil for added crispiness.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through & the coating is golden brown/crispy.
- Remove from the oven & let rest for a few minutes before garnishing with the fresh parsley. Serve warm & enjoy!
