One Skillet Honey BBQ Chicken & Rice
All it takes is a single skillet to produce a meal that is so delicious that you will want to lick the bowl! It has everything that you need in it, so it is not necessary to have any sides with it!
Ingredients:
- 2 large boneless & skinless chicken breasts, diced
- 1 c. long-grain white rice
- 1 c. chicken broth
- 1/2 c. BBQ sauce
- 2 T. honey
- 1 T. olive oil
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- Salt & pepper, to taste
- Fresh parsley, chopped (garnish)
- Green onion, diced (garnish)
Directions:
- Heat the olive oil in a large skillet over medium heat for 2 minutes.
- Add the diced chicken then season it with salt & pepper (to taste). Cook it for 6-8 minutes until golden brown & cooked through. Remove the chicken & set it aside.
- In the same skillet sauté the onion & garlic for 3 minutes. They should be soft & fragrant.
- Stir in the rice & cook for 1-2 minutes, coating the rice well in the oil & aromatics.
- Pour in the chicken broth, cover & bring to a boil. Reduce the heat to low & simmer for 15 minutes until the rice is tender. The liquid should be absorbed at this point.
- While the rice cooks, mix the BBQ sauce & honey in a small bowl.
- Once the rice is done, fluff it with a fork & then return the chicken to the pan. Pour over the honey BBQ sauce & stir gently to combine. Heat through for 2-3 minutes.
- Garnish with the fresh parsley and/or the green onion. Then serve immediately.
