One Skillet Honey BBQ Chicken & Rice
This is a delicious recipe for those following a keto diet! Or for those looking for something different from their regular supper menu! It’s packed with flavor & you don’t need many sides to go with it!
Makes 4 servings
Ingredients:
- 2 large chicken breasts, boneless & skinless, diced
- 1 c. long-grain white rice
- 1 c. chicken broth
- 1/2 c. barbeque sauce
- 2 T. honey
- 1 T. olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Directions:
- Heat the olive oil in a large skillet over medium-heat for 2 minutes.
- Add the diced chicken with salt & pepper (to taste). Next cook for 6-8 minutes per side or until golden & cooked through. Then remove it from the pan & set it aside.
- In the same skillet sauté the onion & garlic for 3 minutes. Or until softened & fragrant.
- Stir in the rice & cook for 1-2 minutes, coating it well in the oil & aromatics.
- Pour in the chicken broth, cover the pan with a lid & bring it to a boil. Then reduce the heat to low & simmer for 15 minutes until the rice is tender. Or until all of the liquid is absorbed.
- While the rice cooks, mix the barbeque sauce & honey in a small bowl.
- Once the rice is done, fluff it with a fork & return the chicken to the skillet. Pour the honey barbeque sauce over everything & stir gently to combine. Heat through for 2-3 minutes.
- Garnish with the chopped parsley & serve immediately while it is still hot!
