Monster Cookie Bars

These are some of our all time favorites! They are loaded up with chocolate & chocolate sandwich cookies!

Monster Cookie Bars is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 1 1/2 c. old-fashioned oats
  • 1/2 c. all-purpose flour (or almond flour)
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt, or to taste
  • 1/2 c. (1 stick) of unsalted butter, at room temperature
  • 1/2 c. creamy peanut butter
  • 1/2 c. granulated sugar
  • 1/2 c. packed light brown sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1/2 c. crushed chocolate sandwich cookies (such as Oreos), not pulverized as you want chunks
  • 1/2 c. chocolate chips
  • 1/2 c. M&M’s or similar candies
  • 1/2 c. raisins

 

Directions:

  1. Preheat the oven to 350°F.
  2. Line an 8″ square baking pan with parchment paper, or butter it, or spray it with cooking spray
  3. In a medium-sized bowl combine the oats, flour, baking soda & salt (to taste). Stir until evenly combined then set aside.
  4. In a large bowl aggressively beat together the butter & peanut butter. Until smooth & creamy. Can use a hand mixer or a stand mixer for this.
  5. Add the granulated sugar & light brown sugar to the butter mixture. Then beat until well combined. Add the egg & vanilla then mix until smooth.
  6. Gradually add the oats mixture to the peanut butter mixture. Stir until everything is well combined & the dough comes together.
  7. Gently fold in the crushed cookies, chocolate chips, M&M’s & the raisins.
  8. Pour the cookie dough into the prepared baking pan & spread it out evenly with a spatula.
  9. Bake for 20-25 minutes, or until the edges are lightly golden brown & a toothpick inserted into the center comes out clean. The bars will firm up as they cool.
  10. Remove from the oven & allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Once cool, cut into 12 bars.
