Mexican Taco Bowls
This dish is high in protein from the minced meat, which helps support muscle maintenance and satiety, while the fiber-rich vegetables aid in digestion and weight loss! You will enjoy every bite of this recipe!
Ingredients:
- 8 oz. lean ground beef or turkey
- 1 T. olive oil
- 1/2 c. tomatoes, diced
- 1/4 c. red onion, chopped
- 1/4 c. green bell pepper, chopped
- 1/2 tsp. cumin
- 1/2 tsp. paprika
- 1/4 tsp. garlic powder
- salt & pepper, to taste
- 1/2 c. shredded lettuce
- 1/4 c. shredded cheddar cheese (optional)
- 1/4 c. avocado, diced
- 1 T. cilantro, chopped
- 1 T. lime juice or 1/2 of a lime
- 1 jalapeño, sliced (optional garnish)
Directions:
- Heat the olive oil in a skillet over medium heat. Add the minced meat & cook for about 5-7 minutes. Break the meat apart with a wooden spoon. Add the cumin, smoked paprika, chili powder, garlic powder, salt & pepper. Stir well for another 3-4 minutes until fully cooked.
- While the meat is cooking dice the tomatoes, red onion & bell pepper.
- Divide the shredded lettuce between two bowls. Add the cooked meat on top. Sprinkle with tomatoes, red onion, bell pepper & avocado. Add shredded cheese (if using). Finish with chopped cilantro, jalapeño (if using) & a squeeze of lime juice.
