Low Carb Asian Chicken Stir Fry
If you are looking to put some spice in your life then this recipe is for you! It is an Asian dish that has chicken & veggies in it! It is the most ideal meal for those following a Keto/Low Carb way of life!
Makes 2 servings
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 T. sesame oil
- 1/2 c. broccoli florets
- 1/2 bell pepper, sliced
- 1/2 zucchini, sliced
- 1/4 c. green onions, chopped
- 1 T. soy sauce (or coconut aminos)
- 1 T. rice vinegar
- 1 T. fresh ginger, grated
- 1 garlic clove, minced
- 1/2 T. chili flakes (optional)
- 1 T. sesame seeds (optional garnish)
Directions:
- Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken slices & cook for about 5-6 minutes, stirring occasionally. Cook until the chicken is browned & cooked through. Remove the chicken from the skillet & set it aside.
- Sauté the vegetables in the same skillet by adding the broccoli, bell pepper, zucchini & green onions. Cook for 3-4 minutes until the vegetables are tender-crisp.
- Add the minced garlic & grated ginger to the pan with the vegetables. Then cook for 1 more minute. Return the cooked chicken to the skillet. Stir in the soy sauce (or coconut aminos), rice vinegar & chili flakes (optional) & toss to combine everything evenly.
- Serve hot & garnish with sesasme seeds (if desired).
