Loaded Potato Soup

There is nothing greater than potato soup! Especially when you are following a low carb/keto diet, or a low carb/keto lifestyle!

Loaded Potato Soup is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 4 Large Russet Potatoes, peeled & diced
  • 1 c. shredded carrots
  • 6 c. of chicken broth
  • 2 onions, whole (for flavoring)
  • 2 stalks of celery (for flavoring)
  • 1 10 oz. can of Cream of Chicken Soup
  • 1/4 cup flour (or almond flour)
  • 3 T. salted butter
  • 1 c. of Heavy Whipping Cream or Half & Half
  • 2 c. of shredded Colby Jack Cheese (or cheese of choice)
  • 1 c. of crumbled cooked bacon (optional garnish)
  • 1 c. Sour Cream (optional garnish)

 

Directions:

  1. Melt the butter in the bottom of a dutch oven or saucepan cook on medium heat.. Then add the flour (or almond flour) & stir until well combined.
  2. Add the Cream of Chicken soup & stir until well combined.
  3. Then add the chicken broth, shredded carrots, diced potatoes, the onions & the celery stalks.
  4. Cook for approximately 30 minutes, until the potatoes & carrots are fork tender.
  5. Add the heavy whipping cream & cook on low until mixed together.
  6. Add the shredded cheese & stir until melted.
  7. Serve with the bacon crumbles & sour cream (optional garnishes)
