Honey Garlic Chicken Bites Over Creamy Rice
What a great way to enjoy a complete meal without all of the carbs! This recipe is tasty & will taste great from the first bite to the last one!

Ingredients for the Chicken:
- 1 lb. chicken breast, boneless & skinless, cut into bite-sized pieces
- 1/2 c. flour (or almond flour)
- 1/2 tsp. paprika
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. pepper (or to taste)
- 2 T. oil for frying
- 1/4 tsp. fresh parsley, chopped (optional garnish)
Ingredients for the Sauce:
- 1/4 c. honey
- 2 T. soy sauce (or coconut aminos)
- 2 cloves of garlic, minced
- 1 T. apple cider vinegar
Ingredients for the Creamy Rice:
- 2 c. cooked rice
- 1/2 c. heavy cream
- 1/2 c. shredded cheese (your choice)
- Salt & pepper (to taste)
Directions:
- Mix the flour, paprika, salt (to taste) & black pepper (to taste) together until well combined.
- Toss the chicken breast pieces in the flour mixture until evenly coated.
- Fry in the oil until golden & cooked through.
- In a small saucepan simmer the honey, soy sauce, minced garlic & apple cider vinegar until slightly thickened.
- Coat the fried chicken in the Sauce.
- Mix the cooked rice with the heavy cream, shredded cheese (your choice), salt (to taste) & pepper (to taste) over low heat.
- Serve the chicken over the creamy rice & garnish with fresh parsley (optional)!
