Grilled Chicken Fajita Bowl
This is the ultimate way to get a low carb & keto meal packed into a single bowl! It has all of the flavor without all of the carbs! If you are hungry for some Mexican flair, then this recipe is for you!
Serves 2
Ingredients:
- 2 boneless, skinless chicken breasts, cut into strips
- 1 T. olive oil (light coating)
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. smoked paprika
- 1 garlic clove, minced
- 1/2 of a lime, juiced
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 red onion, sliced
- 1 c. shredded lettuce
- 1/2 c. fresh cilantro, chopped
- 1/2 lime, cut into wedges
Directions:
- Marinate the chicken in a bowl by mixing them with the olive oil, lime juice, garlic salt, pepper, chili powder, cumin & smoked paprika. Let marinate for at least 10 minutes (or longer for a deeper flavor).
- Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5-7 minutes until fully cooked. Remove from the pan.
- In the same pan add the sliced peppers & onion. Sauté for 3-4 minutes until lightly charred & tender.
- Divide the shredded lettuce between two bowls.
- Top with cooked chicken, sautéed peppers, onions, and fresh tomatoes.
- Sprinkle with fresh cilantro & serve with lime wedges.
