Garlic Parmesan Beef & Bowtie Pasta
This is a high protein & affordable recipe! You will fall in love with the flavors as they meld in your mouth, from the first bite, to the last one!
Ingredients:
- 1 lb. 93/7 lean ground beef
- 16 oz. cottage cheese, 1% milkfat
- 15 oz. Protein+ bowtie pasta
- 4 oz. cherry tomatoes, halved
- 4 oz. Parmesan cheese, freshly shredded
- 6 garlic cloves, minced
- 1/4 c. water
- 1/2 T. garlic powder
- 1/2 T. onion powder
- 1/2 tsp. Italian seasoning
- 1 tsp. oregano
- Salt & pepper, to taste
Directions:
- Cook the pasta according to the package’s directions. Once it is finished cooking, strain it & return it to the pan then set it aside.
- In a food processor or blender, add the cottage cheese, Parmesan cheese & water. Blend until nice & smooth.
- In a large skillet over medium-high heat add the ground beef, cook it until it is no longer pink, breaking it up throughout the process.
- Add in the tomatoes. Let it cook for about 5 minutes, or until the tomatoes are soft & supple.
- Add in the garlic powder, onion powder, Italian seasoning & oregano. Mix together & cook for about 30 seconds.
- Add in the minced garlic, mix & cook for about 30 seconds.
- Reduce the heat to low & add in the cottage cheese sauce. Stir to combine & let it simmer for 2-3 minutes.
- Pour the meat sauce in with the cooked pasta. Stir to combine & continue to simmer for about 5 minutes. Taste it to see if you need to add salt & pepper (to taste).
