Garlic Parmesan Beef & Bowtie Pasta

Ingredients:

  • 1 lb. 93/7 lean ground beef
  • 16 oz. cottage cheese, 1% milkfat
  • 15 oz. Protein+ bowtie pasta
  • 4 oz. cherry tomatoes, halved
  • 4 oz. Parmesan cheese, freshly shredded
  • 6 garlic cloves, minced
  • 1/4 c. water
  • 1/2 T. garlic powder
  • 1/2 T. onion powder
  • 1/2 tsp. Italian seasoning
  • 1 tsp. oregano
  • Salt & pepper, to taste

 

Directions:

  1. Cook the pasta according to the package’s directions. Once it is finished cooking, strain it & return it to the pan then set it aside.
  2. In a food processor or blender, add the cottage cheese, Parmesan cheese & water. Blend until nice & smooth.
  3. In a large skillet over medium-high heat add the ground beef, cook it until it is no longer pink, breaking it up throughout the process.
  4. Add in the tomatoes. Let it cook for about 5 minutes, or until the tomatoes are soft & supple.
  5. Add in the garlic powder, onion powder, Italian seasoning & oregano. Mix together & cook for about 30 seconds.
  6. Add in the minced garlic, mix & cook for about 30 seconds.
  7. Reduce the heat to low & add in the cottage cheese sauce. Stir to combine & let it simmer for 2-3 minutes.
  8. Pour the meat sauce in with the cooked pasta. Stir to combine & continue to simmer for about 5 minutes. Taste it to see if you need to add salt & pepper (to taste).
