Garlic Parm Broccoli
This recipe is about to make you look at veggies in a whole new way! You will eat it, then ask for seconds & thirds!

Ingredients:
- 1 large head of broccoli
- 3 T. olive oil
- 4 cloves of garlic, minced
- 1/2 tsp. red pepper flakes (optional)
- 1/2 tsp. salt, or to taste
- 1/4 tsp. freshly ground black pepper, or to taste
- 1/2 c. Parmesan cheese, freshly grated
- 1/4 c. mozzarella cheese, shredded
- Fresh lemon juice
Directions:
- Preheat the oven to 400°F.
- Wash & cut the broccoli had into bite-size florets. Try to cut them evenly so that they roast in the oven at the same time.
- In a large bowl toss in the broccoli florets with the olive oil, garlic, red pepper flakes (optional), salt (to taste) & freshly ground black pepper (to taste). Make sure every piece of the broccoli florets gets coated.
- Spread the broccoli evenly onto a prepared baking sheet. Put it in the oven for 20-25 minutes, tossing them halfway through. The broccoli should get nice & crispy on the edges but still tender in the middle.
- Once the broccoli is roasted to golden perfection, pull it out of the oven & immediately sprinkle the freshly grated Parmesan cheese over the top of the hot broccoli. Letting the heat of the broccoli melt the cheese right into the florets.
- Then sprinkle the shredded mozzarella cheese on top of the broccoli florets, for that extra cheesy gooey goodness!
- Return the pan to the oven for another 2-3 minutes, or until the cheese is all melty & bubbling.
- Remove from the oven & give the broccoli a good squeeze of fresh lemon juice. The citrusy zing is the perfect contrast to the richness of the garlic & cheese!
- Serve hot, straight from the baking sheet. This is the perfect side dish for any meal!
Pro Tip: If a crispier texture is wanted, halfway through roasting, flip the broccoli & smash it with the bottom of a glass measuring cup. This will give the broccoli florets more surface area to crisp up!
