Cookie Dough Bars
If you have a sweet tooth, but want to maintain a low carb/keto diet, then this recipe is for you!

Ingredients for the Cookie Dough:
- 1 1/2 c. almond flour
- 1/2 c. peanut butter
- 1/2 c. pure maple syrup
- 1/4 c. coconut oil
- 1 tsp. vanilla
- 1 c. chocolate chips
Ingredients for the Topping:
- 1 c. chocolate chips
- 1/2 c. peanut butter
Directions:
- Mix all of the ingredients for the Cookie Dough together until well combined.
- Like a 8″ or 9″ square baking pan with parchment paper.
- Press the Cookie Dough down into the bottom of the baking pan, making sure that it is evenly distributed throughout.
- To make the Topping: Add the chocolate chips to a microwave safe bowl. Then add the peanut butter in the center of the bowl. Melt them together, in 30 second increments, stirring every 30 seconds until the chocolate chips are melted & the mixture is creamy without any lumps.
- Pour the Topping over the Cookie Dough.
- Refrigerate for at least 1 hour before taking it out of the baking pan.
- Cut into bars before eating & enjoy!
