Chickpea Chocolate Chip Cookies
A surprisingly smooth cookie dough, that bakes into a soft, satisfying treat! They are naturally sweet, flour-free & protein-balanced!

Ingredients:
- 1 can of chickpeas, drained & rinsed
- 1/3 c. maple syrup
- 1/2 c. peanut butter
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. vanilla extract
- Handful of dark chocolate chips
Directions:
- Preheat the oven to 350°F.
- In a blender, blend the chickpeas until smooth.
- Add the maple syrup, peanut butter, baking powder, baking soda & vanilla. Blend again until fully combined.
- Line a baking sheet with parchment paper.
- Scoop the cookie dough out onto the baking sheet & top each one with the dark chocolate chips.
- Bake them for about 25 minutes, or until they are set.
- Let cool slightly before serving.
