Chickpea Chocolate Chip Cookies

A surprisingly smooth cookie dough, that bakes into a soft, satisfying treat! They are naturally sweet, flour-free & protein-balanced!

Chickpea Chocolate Chip Cookies is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 1 can of chickpeas, drained & rinsed
  • 1/3 c. maple syrup
  • 1/2 c. peanut butter
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. vanilla extract
  • Handful of dark chocolate chips

 

Directions:

  1. Preheat the oven to 350°F.
  2. In a blender, blend the chickpeas until smooth.
  3. Add the maple syrup, peanut butter, baking powder, baking soda & vanilla. Blend again until fully combined.
  4. Line a baking sheet with parchment paper.
  5. Scoop the cookie dough out onto the baking sheet & top each one with the dark chocolate chips.
  6. Bake them for about 25 minutes, or until they are set.
  7. Let cool slightly before serving.
