Chicken Fajitas
Your whole family will ask for these weekly! They are super flavorful, easy to make & perfect for a quick meal!

Ingredients:
- 2 lbs. chicken breasts, cut into small strips
- 1-2 tsp. neutral oil, such as vegetable oil, or canola oil
- 2 T. freshly squeezed lime juice
- 3 T. avocado oil
- 2 bell peppers, red and/or green
- 1 small onion
- 4 tsp. chili powder
- 1 T. brown sugar
- 2 1/2 tsp. salt, or to taste
- 2 1/2 tsp. onion powder
- 2 garlic cloves, minced
- 2 tsp. black pepper, or to taste
- 1/4 tsp. cayenne pepper (optional)
- 1/4 tsp. ground coriander
- 3/4-1 c. chicken broth or chicken stock
- 1 T. cornstarch
- Hot sauce (optional)
Directions:
- In a bowl combine the minced garlic cloves, avocado oil, lime juice, brown sugar & all of the spices. Whisk until well combined. Taste it in case need some more of the spices.
- Add the chicken strips into the bowl. Massage the chicken strips throughout the sauce until all of the chicken is coated by the sauce. Cover the bowl with plastic wrap & allow it to marinate for 20 minutes.
- Dissolve the cornstarch into the chicken broth, or chicken stock. Stir together until the corn starch thickens the chicken stock, or chicken broth. Then add the hot sauce (optional) & stir until well combined. Then set it aside.
- In a large skillet over medium-high heat, add a little bit of a neutral oil to the skillet & allow it to heat up.
- Once the oil is hot add the sliced onions & the sliced bell peppers. Then sauté for 5 minutes or until they have softened. Then remove them from the skillet.
- Add some of the chicken to the skillet, it is best to cook it in batches, so that all of the chicken has a chance to cook evenly. Once the first batch is browned then remove it from the skillet. Cook the rest of the chicken in the same way.
- Then add the chicken stock sauce & stir everything together.
- Serve on tortillas, or with a side of rice.
