Chicken Bacon Ranch Quesadillas
If you are looking for a high protein, yet low carb meal, then this recipe fits the bill! It is packed with chicken & bacon! It is the perfect, quick meal that will leave your craving for a south of the border meal satisfied!
Makes 2 Quesadillas
Ingredients:
- 2 boneless & skinless chicken breasts, cooked & shredded
- 3 strips of bacon, cooked & diced
- 1/2 c. Greek yogurt
- 1/4 c. Ranch dressing mix
- 1 Jalapeño, optional
- 1/2 tsp. onion powder
- 1/2 c. cheddar cheese, shredded
- 1/2 c. Mexican cheese blend, shredded
- 4 flour tortillas (Use low carb tortillas for Keto or gluten free for gluten free)
- 1 T. cilantro, optional topping
- 1/4 c. Ranch Dressing, salsa or picante sauce, optional dipping sauces
Directions:
- Add the shredded chicken,Greek yogurt, bacon, jalapeño, ranch dressing mix & onion powder to a bowl. Mix until well combined.
- Add half of the cheddar cheese & the Mexican cheese blend to half of a tortilla. Then add half of the chicken mix & more of the cheeses. Then fold the tortilla over.
- Repeat the same process for the second Quesadilla.
- Cook on a greased pan set on medium heat for 2 minutes per side or until desired level of crispiness is reached.
- Top with Ranch Dressing & fresh cilantro
- Cut each Quesadilla into four or six wedges. Then eat them while they are warm, dipping them into the optional dipping sauces, to taste.
