Cajun Chicken & Street Corn Rice Bowl
If you are looking for a high protein meal that is packed full of flavor then you have come to the right place! You will want to make this recipe on a weekly basis!

Ingredients:
- 3 lbs. frozen super sweet corn
 - 1 1/2 lbs. chicken breasts, boneless & skinless, chopped
 - 14.5 oz. can of diced tomatoes, drained
 - 10 oz. bag of frozen peppers & onions
 - 2 c. fresh spinach, chopped
 - 2 T. butter
 - 1 T. olive oil
 - 1 T. Cajun seasoning
 - 1 T. garlic powder
 - 1 T. onion powder
 - 1/2 T. smoked paprika
 - Salt & black pepper, to taste
 - 1/4 c. sour cream or plain yogurt (optional garnish)
 
Directions:
- Add the chicken to a bowl. Season it with the Cajun seasoning. Mix everything together to coat the chicken & set it aside.
 - In a large skillet over medium-high heat, add in the olive oil. Once it is hot add in the seasoned chicken, then cook for 3-4 minutes on each side, or until it is cooked through & has a nice color on the outside of it. Then remove it from the skillet & set it aside.
 - In a large saucepan over medium-high heat add in the butter. Once it is melted add in the corn & mix it with the butter. Once it is evenly coated, add in the peppers & onions. Then the can of drained diced tomatoes, spinach, garlic powder, onion powder & smoked paprika.
 - Mix everything together until well combined & cook for about 15 minutes until most of the liquid is absorbed. Then taste it before adding the salt & pepper (to taste).
 - Once the corn mixture is done, portion it out & add the chicken to the top of it. May add sour cream as an optional topping, if desired.
