Cajun Chicken & Street Corn Bowl

Ingredients:

  • 3 lbs. frozen super sweet corn
  • 1 1/2 lbs. chicken breasts, boneless & skinless, chopped
  • 14.5 oz. can of diced tomatoes, drained
  • 10 oz. pkg. of frozen peppers & onions
  • 2 c. fresh spinach, chopped
  • 2 T. butter
  • 1 T. olive oil
  • 1 T. Cajun seasoning
  • 1 T. garlic powder
  • 1 T. onion powder
  • 1/2 T. smoked paprika
  • Salt & pepper, to taste
  • 1/4 c. sour cream (optional condiment)

 

Directions:

  1. Add the chicken to a bowl & season it with the Cajun seasoning then set it aside.
  2. In a large skillet, over medium-high heat, add the olive oil. Once it is hot add the chicken & cook for 3-4 minutes on each side. Or until it is cooked through & has a nice color on the outside. Once it is finished cooking set it aside.
  3. In a large saucepan, over medium-high heat, add the butter to the saucepan. Then add in the corn & mix it around. Then add in the diced tomatoes, chopped spinach, garlic powder, onion powder & paprika. Mix everything together really well & cook for about 15 minutes stirring it occasionally.
  4. Once it has cooked thoroughly, add salt & pepper (to taste).
  5. In serving bowls add the corn & then the chicken. Top with sour cream (optional) & enjoy!
