Cajun Chicken & Street Corn Bowl

Ingredients:
- 3 lbs. frozen super sweet corn
- 1 1/2 lbs. chicken breasts, boneless & skinless, chopped
- 14.5 oz. can of diced tomatoes, drained
- 10 oz. pkg. of frozen peppers & onions
- 2 c. fresh spinach, chopped
- 2 T. butter
- 1 T. olive oil
- 1 T. Cajun seasoning
- 1 T. garlic powder
- 1 T. onion powder
- 1/2 T. smoked paprika
- Salt & pepper, to taste
- 1/4 c. sour cream (optional condiment)
Directions:
- Add the chicken to a bowl & season it with the Cajun seasoning then set it aside.
- In a large skillet, over medium-high heat, add the olive oil. Once it is hot add the chicken & cook for 3-4 minutes on each side. Or until it is cooked through & has a nice color on the outside. Once it is finished cooking set it aside.
- In a large saucepan, over medium-high heat, add the butter to the saucepan. Then add in the corn & mix it around. Then add in the diced tomatoes, chopped spinach, garlic powder, onion powder & paprika. Mix everything together really well & cook for about 15 minutes stirring it occasionally.
- Once it has cooked thoroughly, add salt & pepper (to taste).
- In serving bowls add the corn & then the chicken. Top with sour cream (optional) & enjoy!
