Buffalo Chicken Extra Protein Quesadilla
Trying to eat healthier but love your chicken nuggets? Here is an easy chicken nugget recipe that has a great barbeque flavor and is as easy to make as it is delicious!
Ingredients:
- 1 c. of shredded chicken (or you can use canned)
- 1/2 cup cottage cheese, that has been blended in your food processor or blender
- 3 T. hot sauce
- 1 c. shredded cheese (use your favorite)
- Salt & pepper to taste
- 1 Low carb tortilla
Instructions:
- Mix together chicken, cottage cheese & hot sauce until mixed well.
- Add cheese on top & spread out evenly.
- Microwave for 90 seconds & stir your mixture.
- Butter up a low carb tortilla and put in a fry pan on medium heat, butter side down.
- Cover 1/2 of the tortilla with the Buffalo Chicken Mixture & fold over the tortilla.
- Cook both sides of the tortilla until golden & remove from the pan.
- Then cut in half and enjoy!
*Note: Recipe is easy to double or triple to serve the entire family!
