Bang Bang Chicken Fried Rice
As a one-dish meal, there’s no need for sides, because this recipe has everything that you need! The flavors are amazing & you will want to make it on a regular basis!
Ingredients:
- 1 1/2 lbs. chicken breasts, boneless & skinless, cubed
- 1 T. vegetable oil
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1 tsp. kosher salt, or to taste
- 1/2 tsp. black pepper, or to taste
- 1 c. Bang Bang sauce, divided *this is integral to this recipe! It is a sweet & spicy mayo based sauce that tastes so good!
Fried Rice Ingredients:
- 2 T. sesame oil, divided
- 4 large eggs, beaten
- 1/2 tsp. kosher salt, or to taste
- 2 large carrots, diced
- 1 large white onion, diced
- 1/4 c. green onions, diced, plus more for garnish
- 1 tsp. garlic, minced
- 4 c. long-grain white rice, cooked & cooled
- 1/4 c. butter, melted
- 1 tsp. lemon juice
- 2 T. soy sauce (or coconut aminos)
- 1/3 c. frozen peas
Directions:
- Put the chicken in a bowl with the vegetable oil, garlic powder, salt & black pepper. Mix well.
- Preheat an air fryer to 400° F & cook the chicken in a single layer for 11-12 minutes. Flip it halfway through, cooking it until golden & cooked until the internal temperature is 165° F. Set aside in a bowl covered with aluminum foil to keep it warm. If an air fryer is unavailable, cook the chicken in a skillet for 6-8 minutes over medium-high heat, turning occasionally.
- Heat 1 T. sesame oil in a large skillet over high heat. Pour in beaten eggs, sprinkle with kosher salt & scramble gently until just set into soft curds. Transfer to a plate & set aside.
- Reduce heat to medium-high & add the remaining sesame oil. Add the diced carrots, white onion & green onions. Cook them for about 5 minutes until the carrots are tender. Stir in the minced garlic & cook for 1 more minute.
- Add the cooled rice to the skillet, breaking it up with a spatula & stirring into the vegetables. Let cook for 2-3 minutes, stirring occasionally, until heated through.
- Add the scrambled eggs to the pan, with the melted butter, the soy sauce & the peas. Stir well & cook for 2-3 minutes. Everything should be hot & evenly coated.
- Toss in the chicken with 1/2 c. of the Bang Bang sauce. Served fried rice topped with sauced chicken, drizzle with remaining sauce (if desired) & garnish with the extra green onions!
- Use day-old rice, cold rice, for the best fried rice texture to avoid mushiness!
