Chicken Fajitas

Red Kettle Cook

Your whole family will ask for these weekly! They are super flavorful, easy to make & perfect for a quick meal!

Chicken Fajitas is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 2 lbs. chicken breasts, cut into small strips
  • 1-2 tsp. neutral oil, such as vegetable oil, or canola oil
  • 2 T. freshly squeezed lime juice
  • 3 T. avocado oil
  • 2 bell peppers, red and/or green
  • 1 small onion
  • 4 tsp. chili powder
  • 1 T. brown sugar
  • 2 1/2 tsp. salt, or to taste
  • 2 1/2 tsp. onion powder
  • 2 garlic cloves, minced
  • 2 tsp. black pepper, or to taste
  • 1/4 tsp. cayenne pepper (optional)
  • 1/4 tsp. ground coriander
  • 3/4-1 c. chicken broth or chicken stock
  • 1 T. cornstarch
  • Hot sauce (optional)

 

Directions:

  1. In a bowl combine the minced garlic cloves, avocado oil, lime juice, brown sugar & all of the spices. Whisk until well combined. Taste it in case need some more of the spices.
  2. Add the chicken strips into the bowl. Massage the chicken strips throughout the sauce until all of the chicken is coated by the sauce. Cover the bowl with plastic wrap & allow it to marinate for 20 minutes.
  3. Dissolve the cornstarch into the chicken broth, or chicken stock. Stir together until the corn starch thickens the chicken stock, or chicken broth. Then add the hot sauce (optional) & stir until well combined. Then set it aside.
  4. In a large skillet over medium-high heat, add a little bit of a neutral oil to the skillet & allow it to heat up.
  5. Once the oil is hot add the sliced onions & the sliced bell peppers. Then sauté for 5 minutes or until they have softened. Then remove them from the skillet.
  6. Add some of the chicken to the skillet, it is best to cook it in batches, so that all of the chicken has a chance to cook evenly. Once the first batch is browned then remove it from the skillet. Cook the rest of the chicken in the same way.
  7. Then add the chicken stock sauce & stir everything together.
  8. Serve on tortillas, or with a side of rice.
