Garlic Parm Broccoli

This recipe is about to make you look at veggies in a whole new way! You will eat it, then ask for seconds & thirds!

Garlic Parm Broccoli is a Free Recipe from RedKettleCook.com!

Ingredients:

  • 1 large head of broccoli
  • 3 T. olive oil
  • 4 cloves of garlic, minced
  • 1/2 tsp. red pepper flakes (optional)
  • 1/2 tsp. salt, or to taste
  • 1/4 tsp. freshly ground black pepper, or to taste
  • 1/2 c. Parmesan cheese, freshly grated
  • 1/4 c. mozzarella cheese, shredded
  • Fresh lemon juice

 

Directions:

  1. Preheat the oven to 400°F.
  2. Wash & cut the broccoli had into bite-size florets. Try to cut them evenly so that they roast in the oven at the same time.
  3. In a large bowl toss in the broccoli florets with the olive oil, garlic, red pepper flakes (optional), salt (to taste) & freshly ground black pepper (to taste). Make sure every piece of the broccoli florets gets coated.
  4. Spread the broccoli evenly onto a prepared baking sheet. Put it in the oven for 20-25 minutes, tossing them halfway through. The broccoli should get nice & crispy on the edges but still tender in the middle.
  5. Once the broccoli is roasted to golden perfection, pull it out of the oven & immediately sprinkle the freshly grated Parmesan cheese over the top of the hot broccoli. Letting the heat of the broccoli melt the cheese right into the florets.
  6. Then sprinkle the shredded mozzarella cheese on top of the broccoli florets, for that extra cheesy gooey goodness!
  7. Return the pan to the oven for another 2-3 minutes, or until the cheese is all melty & bubbling.
  8. Remove from the oven & give the broccoli a good squeeze of fresh lemon juice. The citrusy zing is the perfect contrast to the richness of the garlic & cheese!
  9. Serve hot, straight from the baking sheet. This is the perfect side dish for any meal!

 

Pro Tip: If a crispier texture is wanted, halfway through roasting, flip the broccoli & smash it with the bottom of a glass measuring cup. This will give the broccoli florets more surface area to crisp up!
