Monster Cookie Bars
These are some of our all time favorites! They are loaded up with chocolate & chocolate sandwich cookies!

Ingredients:
- 1 1/2 c. old-fashioned oats
- 1/2 c. all-purpose flour (or almond flour)
- 1/2 tsp. baking soda
- 1/4 tsp. salt, or to taste
- 1/2 c. (1 stick) of unsalted butter, at room temperature
- 1/2 c. creamy peanut butter
- 1/2 c. granulated sugar
- 1/2 c. packed light brown sugar
- 1 large egg
- 1 tsp. pure vanilla extract
- 1/2 c. crushed chocolate sandwich cookies (such as Oreos), not pulverized as you want chunks
- 1/2 c. chocolate chips
- 1/2 c. M&M’s or similar candies
- 1/2 c. raisins
Directions:
- Preheat the oven to 350°F.
- Line an 8″ square baking pan with parchment paper, or butter it, or spray it with cooking spray
- In a medium-sized bowl combine the oats, flour, baking soda & salt (to taste). Stir until evenly combined then set aside.
- In a large bowl aggressively beat together the butter & peanut butter. Until smooth & creamy. Can use a hand mixer or a stand mixer for this.
- Add the granulated sugar & light brown sugar to the butter mixture. Then beat until well combined. Add the egg & vanilla then mix until smooth.
- Gradually add the oats mixture to the peanut butter mixture. Stir until everything is well combined & the dough comes together.
- Gently fold in the crushed cookies, chocolate chips, M&M’s & the raisins.
- Pour the cookie dough into the prepared baking pan & spread it out evenly with a spatula.
- Bake for 20-25 minutes, or until the edges are lightly golden brown & a toothpick inserted into the center comes out clean. The bars will firm up as they cool.
- Remove from the oven & allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Once cool, cut into 12 bars.
