Loaded Potato Soup
There is nothing greater than potato soup! Especially when you are following a low carb/keto diet, or a low carb/keto lifestyle!

Ingredients:
- 4 Large Russet Potatoes, peeled & diced
- 1 c. shredded carrots
- 6 c. of chicken broth
- 2 onions, whole (for flavoring)
- 2 stalks of celery (for flavoring)
- 1 10 oz. can of Cream of Chicken Soup
- 1/4 cup flour (or almond flour)
- 3 T. salted butter
- 1 c. of Heavy Whipping Cream or Half & Half
- 2 c. of shredded Colby Jack Cheese (or cheese of choice)
- 1 c. of crumbled cooked bacon (optional garnish)
- 1 c. Sour Cream (optional garnish)
Directions:
- Melt the butter in the bottom of a dutch oven or saucepan cook on medium heat.. Then add the flour (or almond flour) & stir until well combined.
- Add the Cream of Chicken soup & stir until well combined.
- Then add the chicken broth, shredded carrots, diced potatoes, the onions & the celery stalks.
- Cook for approximately 30 minutes, until the potatoes & carrots are fork tender.
- Add the heavy whipping cream & cook on low until mixed together.
- Add the shredded cheese & stir until melted.
- Serve with the bacon crumbles & sour cream (optional garnishes)
