Cottage Cheese Chocolate Mousse
This recipe is rich in protein & low in carbs! Making it a great guilt-free dessert!

Ingredients:
- 1 c. cottage cheese (preferably low-fat)
- 2-3 T. unsweetened cocoa powder
- 1 tsp. vanilla extract
- 1 pinch of salt, or to taste
- Sugar-free chocolate chips or nuts, optional garnish
Directions:
- Combine all ingredients in a blender or food processor. Blend them until they are smooth & creamy.
- Taste the mousse & adjust the sweetness or cocoa powder (if desired).
- Transfer the mousse to serving dishes & refrigerate for at least 30 minutes to firm it up.
- Garnish with sugar-free chocolate chips or nut (if desired) & enjoy!
